The wine

Fattoria di Bacchereto is a winery located in Seano, in the province of Prato, to the north of the Carmignano denomination. Its very lively and expressive wines are still fairly unknown, however they also happen to be one of the most interesting exponents of the district's wine-making tradition.

Fattoria di Bacchereto works with total respect for the environment, avoiding the use of herbicides, chemical fertilisers and pesticides, and is a member of Renaissance des Appellations, an international association of biodynamic wine producers, founded in 2001 by Nicholas Joli.

The winery produces less than 10,000 bottles of its Terre a Mano Carmignano, using a coupage of Sangiovese (75%), Canaiolo (10%) and Cabernet Sauvignon (15%). The grapes originate from vineyards which grow on slopes with chalky and clay soils, on the very hills where the Medici family used to go hunting back in the 1500s. Harvesting, totally by hand and carried out over various days, takes place during the first fortnight of October. Once inside the winery, fermentation occurs in concrete tanks by means of indigenous yeasts. Afterwards, the wine ages on its lees in 350-litre French Allier oak barrels and is bottled 12 to 18 months later, without being clarified or filtered.

In the glass, it appears a bright ruby-red colour which indicates a lively, healthy wine. On the nose, it reveals notes of cherries in liqueur, plums, flowers, sandalwood, tobacco, black pepper and hints of leather. On the palate, the acidity and minerality are the ideal counterbalance for the fruit's sweetness and prove most inviting. Terre a Mano Carmignano is supple on the palate, with distinct and well integrated tannins which lead on to a slightly menthol and persistent finish.
