Vitovska

Together with malvasia istriana, with which it is traditionally vinified in blends, vitovska is the most representative white grape of the Karst. A tough and harsh land: actually, a land with little soil. Underground rivers flow through white soils, made up of rocks, stones, dug by the bora on the border between the Alps and the sea, Italy and Slovenia. A vine, vitovska, which shows the results of these harshness, and therefore extreme, violently territorial. Today it is increasingly rediscovered as a single variety, with its well-structured, mineral and long-lived personality. It expresses, when young, delicate scents of wild flowers, hay, then citrus fruits and sage, which with age turn towards silica, flint, hydrocarbon. On the palate it shows a marked freshness and sapidity that tends to salty; the finish is almond-like and of great persistence.
