The wine

From the characteristic vineyards located in the hilly area of Valpolicella, north of Verona, on clayey-calcareous soils, Regolo is a typical pleasant and full-bodied Ripasso. From carefully selected grapes and vinified with supreme delicacy, Regolo benefits from the same blend of an Amarone and, as by the book, the "ripasso" technique, which consists in the passing of the wine already ready on the wine marc of the Amarone in February. During this second fermentation, the extraction of tannins is stimulated, which ensure this wine’s longevity that characterises it, and also the aromas typical of Amarone.

A bright garnet red wine, Regolo has a nice intense and persistent bouquet, with hints of ripe red fruit and jam, herbs, undergrowth and liquorice. On the palate it expresses a dry and austere flavour, but which is particularly fruity and velvety, of a typical softness and remarkable structure. Harmonious and extremely persistent, it ideally accompanies winter cooking based on game, roasted meats and tasty cheeses.
