Clos Lentiscus Gentlemant Malvasia

The sparkling white 2016 Gentleman Malvasía de Sitges, which mentions Petillant Naturel on the label, was produced by the ancestral method of finishing fermentation in bottle, using grapes from the rare Malvasía de Sitges variety that is having a revival in the last few years. It comes from organic and biodynamic certified vines, but the bottle doesn't carry any certification. The clusters were pressed directly, and the wine fermented with natural yeasts, then was put into bottle at density 1006, where it matured with the lees until November 2021 (all bottles carry disgorging information on the back label). It has abundant small bubbles, with finesse and elegance, and it has the primary aromas of the variety that are quite strong, floral but with a savory twist. It's dry and tasty, with an almost salty finish. 4,674 bottles produced.
